Rick Owens' Persimmon Cookie Recipe
2 cups butter
4 cups sugar
4 eggs
4 cups persimmon pulp
8 cups flour
2 teaspoons salt
4 teaspoons cinnamon
4 teaspoons baking powder
2 teaspoons baking soda
2 cups nuts (walnuts)
1 cup raisins
1 cup coconut
1 cup dates
Note: baking the persimmon fruit in low heat beforehand helps to soften and sweeten them in order to yield good pulp.
Procedure:
Mix together butter, sugar, and eggs. Add persimmon pulp. Then mix flour, salt, cinnamon, baking powder, and baking soda. Add to the previous mixture. Mix in nuts, raisins, coconut and dates. Teaspoon the mixture out onto the cookie sheets and bake at 360 degrees (fahrenheit) for about 29 minutes.
Yields approximately 100 cookies.
